Mom’s Eggless Cake
My Mom is a good cook but the recipe I want to share is my favorite cake of hers. She would make this cake for my birthday every year and I loved it. She is also known for her pecan pie which she always made a whole pie for me to take home at Christmas.
This cake is so moist and sweet. Mom says it is made with love and I believe her. Mom is a loving, funny, strong woman and all her baking is done with love. Unfortunately I don't have a picture of the cake but here is her recipe
Mom's Eggless Cake Recipe
Ingredients:
1/2 cup shortening
1 3/4 cup sugar
2 cups buttermilk
3 cups flour
2 tsps soda
3-4 tsps cinnamon
1 tsp nutmeg
1 tsp vanilla
In a mixer, mix all the above ingredients together alternating the milk and flour.
Pour into a greased and floured 13"x9" cake pan.
Bake in a 350-degree oven for 35 min or until done in the middle. Test by inserting a knife in middle and if comes out clean done.
Icing
Combine 1 cup brown sugar
2 tbls milk
2 tbls coconut (add more to your taste)
Mix and sprinkle on top of cake while the cake is still hot
Put under the broiler till bubbles
